Strawberry Sweet Rolls with Lemon Cream Cheese Glaze

The perfect summery twist on cinnamon rolls, this 2- ingredient dough is stuffed with fresh picked strawberries and topped with lemony cream cheese glaze.

As I mentioned in a previous post, the kids and I went strawberry picking and came home with 12 litres of strawberries. I used 4 litres to make some jam, 4 more litres for baking and we enjoyed 4 litres over the course of the week. The kids snacked on fresh strawberries while participating in online learning, and I topped my overnight oats with berries every morning. We just couldn't get enough of the sweet juicy berries!

While we enjoyed the Hawaiian Strawberry Tart, I posted last week, I wanted to use the strawberries in something more Weight Watchers friendly. The great part of being a foodie and being on WW is the creativity I use, to make low point desserts that I can enjoy and not feel deprived. These fresh strawberry sweet rolls are the perfect example.

Many people LOVE cinnamon rolls, but have you ever had strawberry rolls? I hadn't until last week and I must say that we were all satisfied with the result. While I'm sure the recipes on line which use yeast and tons of sugar are sinfully good, these sweet rolls were just as delicious and made with more healthful ingredients. A truly guilt free and indulgent treat.

I started with the 2-ingredient dough concept, of mixing self rising flour with plain fat free Greek yogurt. I did jazz it up a bit, to make it more suitable for a sweet dessert. I added an egg, vanilla and monk fruit sugar to the dough, which baked up pillowy soft and tender. Fresh berries added a wonderful fresh sweet burst of flavour and a low fat cream cheese and lemon glaze added the perfect amount of sweetness to the rolls.

What is 2-Ingredient dough?

2-Ingredient dough is a SmartPoints friendly dough recipe, from Weight Watchers. It is made by combining equal amounts of fat free Greek yogurt and self rising flour. Since Greek yogurt is 0 points on some plans, the only points you need to count if from the flour, which is 3 points for 1/4 C. This dough can be used to make several baked goods and breads such as bagels, pretzels, buns and even sweet rolls.

What if I don't have Self-Rising flour?

I never buy self rising flour and I've been making this dough for the last 2 months. I simply make my own self-rising flour by adding 1 1/2 tsp of baking powder and 1/2 tsp salt, to 1 cup of flour. So if you use 2 cups of flour, you would add 3 tsp baking powder and 1 tsp salt, etc. 

Can I add other ingredients to my 2-Ingredient dough?

Absolutely! While making bagels and pizza crust, I add garlic and herb seasoning and minced garlic to my dough. In this fresh strawberry sweet roll recipe, I added an egg and sweetener to my dough. The monk fruit sugar for sweetness and an egg as an extra leavening agent, to make the dough fluffier. Since eggs are 0 points on the purple plan, it did not change the point value of my dough.

Can I use 2-Ingredient dough even if I am not on the WW program?

Of course you can! This dough is a quick, easy and healthful alternative to yeast dough. The Greek yogurt adds extra protein to your dough, while keeping the calories low. As indulgent as yeast dough can be, eating carbs in excess can lead to weight gain and health issues.

How do I make Strawberry Sweet Rolls?

Prepare the dough: In a mixing bowl, combine the self rising flour (add the baking soda and salt if making your own) and monk fruit sugar. Add in the fat free Greek yogurt, egg and vanilla and mix until mixture pulls away from the side of the bowl and a dough forms. Knead dough 5-7 times until it is nice and smooth.

Roll the dough: On a lightly flour surface, roll the dough into a rectangle that is 1/4-inch thick. Spread the chopped strawberries evenly over the dough and sprinkle with additional monk fruit sugar. Using the longer side of the dough, start rolling it over the berries, as you would when making cinnamon rolls. Cut the roll into 8 equal slices and place in a lightly sprayed baking pan. Bake the rolls until they begin to brown and center dough is cooked through. Remove from oven and let cool.

Prepare the glaze: combine softened light cream cheese, with powdered sugar and lemon zest, until smooth. Spoon equal amounts of the glaze over each strawberry roll and garnish with additional fresh strawberries that have been sliced in half.

Strawberry Sweet Rolls with Lemon Cream Cheese Glaze

3/4 C fat free Greek yogurt
1 1/2 C all-purpose flour
2 1/4 tsp baking powder
1/2 tsp salt
5 Tbs monk fruit sweetener, divided
1 large egg
1 tsp vanilla
1 C strawberries, hulled and chopped
4 small strawberries; cut in half from stem to pointy end

Glaze:
1/3 C light cream cheese
1 tsp lemon zest (zest of one lemon)
4 Tbs powdered sugar

Preheat oven to 375 degrees F. Lightly spray a 8x11 inch baking dish and set aside.

In a mixing bowl, combine the Greek yogurt, egg, vanilla and 3 Tbs monk fruit sweetener and mix until smooth.

Add in the flour, baking powder and salt, stirring until mixture starts to pull away from the side and a dough forms. Add more flour (1 Tbs at a time) if too sticky and knead dough until smooth; about 5- 7 times.

Transfer dough to a lightly floured surface and dust with a bit of additional flour. Roll into a rectangle, about 1/4 inch in thickness. 

Spread the chopped strawberries evenly over the dough and sprinkle the remaining 2 Tbs of monk fruit sugar. 

Starting with the longer edge of the dough, roll the dough over the strawberries, as you would when making cinnamon rolls. 

Cut roll into 8 equal slices and place cut side down into prepared pan. 

Bake for 25-35 minutes; until rolls begin to brown and dough in center is cooked through.

Let cool while making the glaze.

For the glaze, whisk together light cream cheese, lemon zest and powdered sugar until silky smooth. Pour equal amounts over lightly cooled rolls and garnish with a fresh strawberry which has been sliced in half, stem to pointy end.

2-Ingredient dough is 3 points per serving on the Blue plan 💙 Points would have to be calculated for the glaze.
I can not verify points for the green plan 💚
