Hawaiian Strawberry Tart- Perfect for Canada Day!

Luscious lime cream cheese filling is nestled into a tender macadamian/coconut crust. Giving this beautiful strawberry tart a tropical feel. A wonderful summer dessert! Jump to Recipe Strawberry season has started here in Ontario. The kids and I have went to pick a few baskets already. We didn't get as much as previous years, since we are growing strawberries in our garden. The berries were big, ripe and so sweet. It took us no time at all to pick our baskets.  Strawberry picking kicks off summer for me and it is a tradition I've brought over from my childhood. I would go picking with my mom, every summer and remember going on a few picking excursions with my grandmother and aunts. That is one of my favourite strawberry picking memories. All of us on the wagon going to the field, laughing and having fun.  I really enjoy heading to the farm to pick our berries, as it gives me a chance to also check out their other produce readily available. You can bet I always come home with s...

Chocolate Chip Cookie Pie (Better than Nestle)

This copycat Toll House Chocolate Chip Cookie Pie is rich, decadent and extremely chocolaty! The filling mimics a warm under baked chocolate chip cookie and is perfectly gooey. Over the top good! Jump to Recipe Around Christmas time, there was a commercial airing here in Canada, for a President's Choice Caramel Chocolate Chip Cookie Pie. One night, while talking to my mom on the phone, she asked if I saw the commercial and if we tried the pie. I told her that yes I had seen the commercial, and no I would not be buying the pie, because I had my own recipe for Toll House Chocolate Chip Cookie Pie. I first heard of this pie, when I lived in Tennessee about 13 yrs ago. I was part of an online community for moms and one of our weekly threads was recipe sharing. This pie popped up and I knew I had to make it. It was absolutely delicious, but for some reason I never made it again. UNTIL mom mentioned the PC pie. Toll House chocolate chip cookies originated in the 1930's when Ruth Wak...

Orange Scented Double Layer Pecan Pie #Blogtober

Jazz up a traditional pecan pie, with a delicious creamy orange scented cheesecake layer. Thanksgiving for us, was a few weeks ago. Our Thanksgiving consisted of a wonderful turkey dinner, with my in laws, which have been in our tiny social bubble since the beginning of this Pandemic. Since there was 7 of us, we all chose to split the menu. I offered to bring homemade rolls, and dessert. I knew I was going to bring the typical pumpkin pie, but wanted to bring a little something different, for those who aren't crazy about pumpkin pie.  My plan was to also make this amazing double layer pecan pie. I say plan, because by my oven decided to partially conk out on me and it took my pumpkin pie almost 2 hrs to cook. So I only ended up bringing the rolls and pumpkin pie. 1 really wasn't sure if it would work, but I decided to try and pair a cheesecake, with pecan pie. I added a hint of orange zest and fresh squeezed orange juice to the cheesecake filling, for a little extra burst of...

Banana Cream Pie

I decided to be adventurous, last week and try my hand at making banana cream pie from scratch. Banana cream is my least favorite pie, but I was looking for something different to do with my bananas. I must say that I'm converted and am in love with this pie. I guess the difference, between store bought and homemade, is that homemade tastes so much better. I always thought that store bought tasted too much like fake bananas. I really hate anything banana flavored. It reminds me of taking penicillin, as a child, LOL. But this pie was wonderful. It had a real banana flavor, which wasn't too overpowering. The custard did not taste egg-y at all, so that made it even better. I'm very proud that my custard turned out so well, and I did not end up with vanilla flavored scrambled eggs, LOL. This is rich, creamy and wonderful. I also made a  banana graham crust , since I wanted a more intense banana flavor. I was a bit disappointed with the crust, which came out a tad chewy. The fl...
