Butter Tart Squares

The delicious flavours of Canadian butter tarts are transformed into a quick and simple recipe. With a crumbly shortbread crust and gooey filling, they are much quicker to make, than butter tarts! Jump to Recipe Life has slowly been getting back to normal for us here at Mom, the Lunch Lady. We are now all fully vaccinated and have been enjoying the slow return to normalcy. Since it was a long weekend here in Ontario, this past weekend, we took advantage to have a family get together with some of my SO's extended family. It was a wonderful day of fun, food, laughter, adventure and memories. Even despite the cold temperatures and the rain. We finished the weekend off at the cottage with more extended family, and one heck of a bonfire! I'm the type of person that hates showing up to an event empty handed, so I decided to make dessert, to bring to our get together. I had been wanting to make my Mom's Butter Tart Squares for some time now, so decided this would be the perfect w...

Strawberry Sweet Rolls with Lemon Cream Cheese Glaze

The perfect summery twist on cinnamon rolls, this 2- ingredient dough is stuffed with fresh picked strawberries and topped with lemony cream cheese glaze. Jump to Recipe As I mentioned in a previous post, the kids and I went strawberry picking and came home with 12 litres of strawberries. I used 4 litres to make some jam, 4 more litres for baking and we enjoyed 4 litres over the course of the week. The kids snacked on fresh strawberries while participating in online learning, and I topped my overnight oats with berries every morning. We just couldn't get enough of the sweet juicy berries! While we enjoyed the Hawaiian Strawberry Tart , I posted last week, I wanted to use the strawberries in something more Weight Watchers friendly. The great part of being a foodie and being on WW is the creativity I use, to make low point desserts that I can enjoy and not feel deprived. These fresh strawberry sweet rolls are the perfect example. Many people LOVE cinnamon rolls, but have you ever had...

Hawaiian Strawberry Tart- Perfect for Canada Day!

Luscious lime cream cheese filling is nestled into a tender macadamian/coconut crust. Giving this beautiful strawberry tart a tropical feel. A wonderful summer dessert! Jump to Recipe Strawberry season has started here in Ontario. The kids and I have went to pick a few baskets already. We didn't get as much as previous years, since we are growing strawberries in our garden. The berries were big, ripe and so sweet. It took us no time at all to pick our baskets.  Strawberry picking kicks off summer for me and it is a tradition I've brought over from my childhood. I would go picking with my mom, every summer and remember going on a few picking excursions with my grandmother and aunts. That is one of my favourite strawberry picking memories. All of us on the wagon going to the field, laughing and having fun.  I really enjoy heading to the farm to pick our berries, as it gives me a chance to also check out their other produce readily available. You can bet I always come home with s...
