Chicken Cordon Bleu Casserole

 A classic dish is turned into a delicious casserole, bursting with creamy pasta. Perfect for a busy weeknight, it is sure to become a family favourite! Jump to the Recipe Chicken Cordon Bleu is so delicious, and  I've been craving it lately. There is just something about the chicken stuffed with salty ham and tangy Swiss cheese that has me wanting to make it ASAP. I do not  make it often, due to it being labour intensive. This pasta version comes together in a snap and is then baked until the cheese is bubbly. A super family-friendly casserole perfect for a weeknight, as it comes together in under 30 minutes. This dish is  super simple to make and tastes phenomenal. I used some leftover ham I had in the freezer, but if you don't have any leftover ham you can use a ham steak, or a thick cut of black forest ham from the deli. Maple Blueberry Zucchini Loaf

Jump to Recipe Last summer was our first attempt at growing our own vegetables. Having moved, our new yard was a blank canvas, to make little gardens along one of the fences. In our old yard, we had extensive flower beds that contained tiger lillies and other plants, so gardening was not possible. So both my SO and I jumped at the chance to grow some veggies in our new yard.  One of the veggies we decided to grow was zucchini. I had to help them along a bit at first, since the female flowers weren't getting pollinated. After a reluctant start, the zucchini became abundant and we were left trying to figure out ways to use it.  I've always enjoyed zucchini cake with cream cheese frosting, but wanted something different. Farmhouse Blueberry Coffee Cake

 Blueberries are paired with vanilla cake batter and cinnamon sugar, for a simple and intoxicating farmhouse favourite. This  cake is light and crumbly, with a wonderful sweet blueberry layer and a nice crunchy cinnamon sugar topping. Jump to Recipe Since moving to a big city, the kids and I have made it a tradition to visit a local farm, during the summer months, to pick strawberries and blueberries. T his is very different than the blueberry picking I did as a kid. Growing up in Northern Ontario, we just drove a few minutes from town and could find wild blueberries everywhere. Unfortunately, now that I live in a more metropolitan area, wild blueberries are few and far between.  So, we usually go farm blueberry picking. I must say, it's much easier than wild blueberry picking, LOL. In about 20 minutes, we have 2 baskets of berries picked, and are headed back to pay for our bounty. I really love going to the farm, because they always have tons of FRESH fruits, veggies, baked goods

This amazing waffle recipe is super simple, with the use of canned cinnamon rolls. Perfect for older kids to prepare, these delicious cinnamon rolls topped with a tangy cream cheese glaze would be the perfect breakfast in bed, for mom on Mother's Day.
