 This  moist and fluffy Coffee Cake is studded with tart spring rhubarb and topped with a sweet and crunchy crumble topping. Perfect paired with a cup of tea, this buttery cake with rhubarb is the perfect afternoon snack. I've already picked a good portion of it, and there is still tons left. I need to pick, chop and freeze for this winter. Rhubarb is one of my favourite Spring bounties. I love that it also lasts all summer long. I've got so many great memories associated with rhubarb, that it wouldn't be summer without at least one rhubarb confection. Pink Cream Soda Cupcakes (Only 2 Ingredients!)

 Cupcakes using only 2 ingredients? All you need is a can of soda pop and a box of cake mix! While I love baking cakes from scratch, cake mix comes in handy when I want to whip up a quick dessert. I love the versatility of cake mix. You can make a cake, as per the directions on the box, you can also turn cake mix into the yummiest cookies, as a crust for a decadent cheesecake , or you can add a can of soda pop, and make a delectable, fluffy 2-ingredient cake.
