Baked Chicken and Bacon Taquitos

 These Baked Chicken and Bacon Taquitos are filled with a creamy bacon and chicken mixture and baked in the oven, not fried. Make a restaurant favourite here at home! Taquitos are a Mexican dish that usually consists of a small rolled up tortilla, that has been filled with either beef or chicken and cheese. Typically deep fried, they are served with sour cream and guacamole.  My family has always been fans of Mexican food. So much so, that we served it during an International Food Day at the cottage. Each cottage involved chose a country from which to serve the native cuisine and we chose Mexico. Our menu consisted of Chicken Taquitos, chips with homemade mango salsa, homemade guacamole, Tequila punch and brownie bites topped with cinnamon whipped cream. It was a super fun day, that I am hoping we can take part in again, if the pandemic ever ends. While it is super simple to find chicken taquitos in the frozen section of any grocery store, I decided I wanted to make them from scratch.

Irish Cream Blondies with Raspberry Swirl

Chewy, buttery and creamy, these blondies are spiked with Irish Cream whiskey and swirled with slightly tart raspberry jam. What are blondies? Basically they are similar to brownies, but made with brown sugar and butter, rather than cocoa powder. They are just as deliciously chewy and addictive as brownies, but are not chocolatey in any way. My mom would make blondies for us often when we were growing up; calling them butterscotch brownies. I always seem to forget about blondies when thinking about baking, but I remembered these little gems when trying to think of a fun St.Patrick's Day recipe.  We always have Baileys Irish Cream Whiskey on hand over the holidays. I am not a coffee drinker, so I never really drink it. The only time I've had Baileys, has been in food. Recipes like my Baileys Sugar Fudge and an amazing cheesecake one of my girlfriends has treated us to in the past. One Pot Chicken and Corn Chili

 This simple yet delicious chili is cooked in one pot and comes together in a snap. Perfect for a cold winter night, this recipe will have dinner on the table in 30 minutes!  I've always been a big fan of food network television and have been watching it for over 20 yrs now. It is one of the things that helped me become the cook I am today and it has helped me think outside the box, when it comes to eating and cooking. Sixteen years ago, when I was on bed rest pregnant with my son, the television became my best friend. I would watch it for hours and discovered a cute little cook named Rachael Ray. I loved her 30 minute meal show, since I knew that once I had kids, my life would turn into a pile of dirty diapers and bottles, LOL. I would watch her show religiously. Every night at 4pm, the TV would be tuned to the Food Network and I would watch Rachael in action. EASY Almond Joy Brownies

 These decadent chocolate and coconut brownies might look fancy, but they are super simple to make. Using a box mix, these delectable semi homemade treats are sure to impress.  I am a sucker for sweets. Baking has always been my favourite way to relax. I just love how you can throw together a bunch of ingredients, and it bakes up into something delicious and sinful.  Fluffy homemade pancakes are made with heart healthy oats and bursting with blueberries. Guaranteed to become your weekend favourite! Ever since my kids were old enough for solid food, pancakes have been one of their favourite foods. Anytime we go visit my parents, my mom has to make pancakes for the kids. It's actually really sweet. Pancakes are such a big part of our meals, we often have them for dinner, paired with fruit salad. No matter what time of day it is, pancakes are always enjoyed in our household. I've always made my pancakes from scratch and I've made them so many times I know the recipe by heart. The kids always request the addition of chocolate chips in their pancakes, but when I feel like they need a bit more nutrition, I make blueberry pancakes. Caramelised Onion, Sweet Potato and Chickpea Pizza

 This easy to make homemade pizza is topped with tender slices of sweet potato, chickpeas, spinach and rich caramelised onion. It is a healthier take on traditional pizza, that will leave you satisfied. My family is crazy for pizza. I'm sure if they could, my son and my SO would eat pizza everyday. There is just something about a nice chewy crust, tart tomato sauce and salty cheese, that just tastes like heaven. While I enjoy a good slice of pizza, I also love to make non traditional pizzas and rarely order traditional pepperoni and cheese for myself. This pizza came about when I wanted something a little different during our homemade pizza night. Since I am not a big meat eater, I decided on a meatless pizza. This recipe can easily become vegan, by using your favourite vegan cheese, rather than mozzarella. Garlic Parmesan Knots

Homemade garlic Parmesan knots are soft, fluffy and fool proof. They come together in under 30 minutes- there's nothing easier than that! It's soup season! I love when the cold weather hits, it gives me a reason to make soup! As much as I love soup, I also LOVE to make something to dip into my soup. Sometimes it's as simple as a toasted bagel, or a grilled cheese; but once in a while I love to make fresh bread or rolls. My kids are always excited when fresh bread hits the table and by the next day, the loaf or rolls have been thoroughly enjoyed. These rolls are something simple I have been able to teach them how to make.  There is just something so intoxicating about fresh bread. Maybe it's the buttery yeasty smell as it's cooking.
