Mini Rolo Banana Bread

A combination of healthy and indulgent, this moist banana bread pairs perfectly with chocolate and caramel. Mini Rolo candy, transforms this banana loaf to a decadent mouth watering creation. Jump to Recipe Anyone else have a stash of frozen bananas in your freezer? My kids are unpredictable when it comes to bananas. Some weeks when I buy them, they eat them in the matter of days, other weeks my bananas stay on the counter until brown and over ripened. That's when they make it to their new home; the freezer.  When I see the pile building up, that's when it's time to make banana bread. My son is taking a food and nutrition class this semester and every other Friday has become his practical days. So far he has made us chocolate chip cookies and a chopped salad. This past Friday he was asked to make a healthy banana bread. The perfect way to use up that stockpile of ripe bananas in my freezer. As a foodie mama, it's been a bit hard to not hover, while my son is in the kit...

Tex Mex Chicken & Zucchini Rice Bowls

Tex Mex chicken and zucchini rice bowls are a hearty, colourful and healthy meal, that is quick to assemble. They are a perfect example of a healthy meal, without sacrificing taste! Jump to Recipe Last weekend was a long weekend here with Victoria Day being this Monday. Since it was a long weekend my SO decided to use up some vacation time to add a few days to our weekend. So we packed up the car and spent 3 nights at his family's cottage. It was a super fun weekend, but we all came back exhausted from staying up late and waking early. It's taken me all week to recover and add in my daily workouts, this mama is exhausted by 5pm. I've always been a fan of simple dinners and if it is cooked in one pan, even better. These rice bowls came about when we needed to use up leftovers from earlier this week. On Tuesday I had made Tex Mex chicken, zucchini, corn and black beans; a recipe I had found on the Weight Watchers app. It seemed simple enough to make and my kids always love ta...

Turkey Sliders with Spicy Ketchup

Turkey Sliders are a healthy alternative to traditional beef sliders. Top them with a chipotle ketchup, for a spicy kick! Jump to Recipe I've never been a fan of ground beef. I was traumatized growing up, being forced to eat any dinner with ground beef. Back then there wasn't any lean ground beef. It was all medium ground beef and it was a budget friendly meat to purchase. Plus my dad loved it. My mom had several recipes she would make with ground beef and I was forced to suffer through them all and clean my plate. It's not the taste I dislike, it was the fact that anytime I would eat ground beef, I end up biting on a piece of chewy or crunchy grizzle. I'm the type of person who can pick out grizzle in a heart beat. Even when cooking with pork, I trim all fat off my chops. I just don't like the texture. So imagine trying to enjoy dinner, and biting down an a piece of grizzle. It was game over for me, but wasting food was a huge no no. Over the years my Mom took pit...

Pumpkin Brownie Cake

Pumpkin, chocolate and spices are combined with a healthy secret ingredient, to make an addictive pan of yumminess. These are the yummiest pumpkin brownies you will ever eat! Jump to Recipe As some of you know, I was the writer of a popular food blog, about 7 yrs ago, before I became a working single mom. Now that I've returned to blogging, I've dug out some of my gear and recently found a recipe I had created back in 2013. During that time, I had become part of an amazing blogging tribe, that I must admit was one of the reasons my first blog was so successful. It was a tribe that supported each other, that promoted each other's blogs/recipes and just became friends.  Some of the ladies in the tribe had created fun challenges for us to participate in each month. One I enjoyed was, cooking something from another member's blog and then posting about it. I've found so many delicious recipes, participating in that challenge. The second I participated in was a challenge...

Skinny Chicken Fried Steak

A healthier chicken fried steak? By baking these steaks, you still get the crunchy breading, without all the oil and fat! This popular comfort food still packs all it's classic flavours, but looses half the fat! Jump to Recipe One way I like to save money on groceries, is by shopping early in the morning, and checking out the discounted meat section. Every grocery store has a section, where they put meat that is close to it's best before date, at a discounted price. It's still perfectly good meat, it just needs to be sold quickly, before it reaches it's date. Once you place it in your freezer, it's just like any other meat you've purchased. A few weeks ago, I found some cube steaks, at 40% off. They weren't very expensive to begin with, but with the additional discount I got 4 good sized steaks for around $3. Who could pass up a deal like that? I don't buy cube steak all that often. I mean other than chicken fried steak, the only other way I've ever...
