Turkey Sliders with Spicy Ketchup

 Turkey Sliders are a healthy alternative to traditional beef sliders. Top them with a chipotle ketchup, for a spicy kick!

I've never been a fan of ground beef. I was traumatized growing up, being forced to eat any dinner with ground beef. Back then there wasn't any lean ground beef. It was all medium ground beef and it was a budget friendly meat to purchase. Plus my dad loved it. My mom had several recipes she would make with ground beef and I was forced to suffer through them all and clean my plate.

It's not the taste I dislike, it was the fact that anytime I would eat ground beef, I end up biting on a piece of chewy or crunchy grizzle. I'm the type of person who can pick out grizzle in a heart beat. Even when cooking with pork, I trim all fat off my chops. I just don't like the texture. So imagine trying to enjoy dinner, and biting down an a piece of grizzle. It was game over for me, but wasting food was a huge no no.

Over the years my Mom took pity on me and started making part of dinner without ground beef. She's leave a corner of our shepherd's pie with only corn and mashed potatoes, she's add my rice to the bottom of the skillet once the ground beef was cooked through and removed, just so I could get some flavour but no meat. Even today, if I cook with ground beef, I rarely eat an amount large enough for it to be considered a serving. I'd rather just pass on the whole thing, which is the case with hamburgers.

Anytime we grill burgers, at home or at the cottage, I grill turkey or chicken burgers for myself. Especially now that I've started the Weight Watcher's program. As part of the program, ground turkey breast and ground chicken breast are zero points. So I've been making many meals with ground chicken and turkey. Absolute heaven for a girl like me, who loathes ground beef!

What is a slider?

Slider is an American term for a steam grilled sandwich, which is typically 2 inches in diameter. The term slider is said to have been first used at White-Castle restaurants, to describe their small onion steamed burgers. A slider is most often used to describe a food that has been made on a slider roll, or a small hamburger. Sliders have risen in popularity over the years and have become a popular Game Day appetizer.

What do you need to make Turkey Sliders?

  • slider rolls/Hawaiian rolls 
  • Parmesan cheese
  • ground turkey
  • onion
  • herbs & spices
  • ketchup
  • chipotle pepper sauce
What Slider Buns are the best?

This is all about personal preference. Most often I use Hawaiian rolls, since they have a touch of sweetness and are so soft and fluffy. I've also used dinner rolls from my favourite bakery. In this recipe I made biscuits to serve our sliders on. As a way to save points on Weight Watchers, I make my 2 ingredient dough and turn it into biscuits for myself.


How to Make Turkey Sliders
  • Since I served these on homemade biscuits, I started out making and baking my biscuits.
  • Using the smaller side on a box grater, grate the onion into a mixing bowl. 
  • Add the ground turkey to the mixing bowl, along with the Parmesan cheese, bread crumbs, herbs and spices and mix gently to combine.
  • Divide the meat into 4 even pieces and form into patties that are 2 inches in diameter.
  • Grill each patty until it reaches and internal temperature of 165 degrees. Remove from grill, cover with foil and let rest while you make the spicy ketchup.
  • In a food processor add the ketchup, chipotle peppers and chipotle sauce. Process until smooth.
  • Serve by cutting the biscuits in half, placing a slider on the bottom half and topping with spicy ketchup.
How to Serve Turkey Sliders

Turkey sliders are best served on your favourite bun. Then you have to opportunity to get creative. You can top them with fresh sliced onion, your favourite cheese, bacon, lettuce, tomato.... the possibilities are endless. 

How to Store Turkey Sliders

Store any leftovers in a plastic container with a lid, and store the ketchup and rolls separately, to avoid the rolls becoming soggy. Alternatively the sliders can be wrapped individually and frozen for up to one month cooked. If you would like to freeze uncooked sliders, simply wrap each patty individually with plastic wrap and place them in a zip top bag. Uncooked patties can be frozen for up to 2 months, only if made with fresh ground turkey meat. If your turkey meat has been thawed before making the patties, they should be cooked before freezing.

Turkey Sliders with Spicy Ketchup

1 lb ground turkey breast
1/3 C Panko bread crumbs
1 oz grated Parmesan cheese
1 small yellow onion
1/4 tsp sea salt
1/4 tsp black pepper
1 tsp garlic powder
1/2 tsp dried basil
1/4 C sugar free ketchup (I use Crazy Mooskies here in Ontario)
2 Tbs canned chipotle sauce
1/4 C canned chipotle peppers

Using the small side of a box grater, grate the onion into a mixing bowl. Add the ground turkey, bread crumbs, Parmesan, garlic powder, basil, salt and pepper.  Using a spoon or your hands, gently mix the turkey mixture until combined.

Form turkey mixture into 4 equal pieces and form into patties that are 2 inches in diameter. Let sit while preheating the grill to 400 degrees F.

Place on preheated grill and cook until internal temperature reaches 165 degrees F. Approximately 5-8 minutes per side. 

Remove from grill, cover loosely with foil and set aside, while preparing the spicy ketchup.

In a food processor, add the ketchup, chipotle sauce and chipotle peppers. Pulse until mixture is smooth. Transfer to a small bowl.

For Biscuits

2 C flour
1 Tbs baking powder
1 Tbs sugar
1 tsp salt
1/3 C butter, cold and cut into small cubes
3/4 C milk

Preheat oven to 425 degrees F.

In a mixing bowl, combine the flour, sugar, baking powder and salt. Add in the cold butter and using a pastry cutter, or your hands, cut in the butter until the mixture resembles coarse crumbs.

Add the milk and use a wooden spoon to mix, making sure not to over work the dough.

Transfer your biscuit dough to a well-floured surface and use your hands to gently work the dough together. If the dough is too sticky, add flour until it you are able to work with it.
 
Once the dough is cohesive, fold in half over itself and use your hands to gently flatten the layers together. Rotate the dough 90 degrees and fold in half again, repeating this step 5-6 times but being mindful to not overwork the dough.

Use your hands to flatten the dough to 1 inch thick and lightly dust a 2 inch round biscuit cutter with flour. 

Making close cuts, press the biscuit cutter straight down into the dough and drop the biscuit onto your prepared baking sheet. Pressing quickly and straight down will help the biscuits puff up.

Repeat until you have gotten as many biscuits as possible and place on parchment lined baking sheet. 

Bake in preheated oven for 12 minutes, until biscuits are beautifully golden brown.

Sliders are 2 WW points each (without a biscuit) on the Purple Plan and 5 WW points if served on biscuits made with 2 ingredient dough.

Sam & Cat Sloppy Waffles

 A nod to the popular preteen TV show Sam & Cat, these s loppy waffles pair classic sloppy joes with crisp waffles. Years ago, my daughter fell in love with a kids show called Sam and Cat. This show melds two shows the kids use to watch together. It stars Sam Puckett (Jennette McCurdy) from iCarly and Cat Valentine (Ariana Grande) from Victorious. It's a witty and fun show and the kids loved the hijinks these two girls get into every week. In one particular episode, they get stuck inside a secret room, they find in their apartment (which use to be Cat's Nonna's before she moved to Elderly Acres). While they are stuck in the secret room, Cat mentions her idea of Sloppy Waffles, which pairs waffles and sloppy joes. Sam falls in love with the idea and once they are rescued by their friend Goomer, the show ends with the girls enjoying Sloppy Waffles.
