Quick & Easy Mini Meatloaf Muffin Recipe

 Quick and Easy Meatloaf Muffins are made with ground beef and topped with a sweet and savoury sauce. These meatloaves can also be made with ground turkey, for a healthier option. Ready in under 20 minutes, they are perfect for a busy weeknight.

It's comfort food season again and with it comes a food bloggers worst nightmare... early darkness! Early darkness means scrambling to get dinner done before the sun starts to set. That is, if there is even sun that day, LOL. Thankfully my amazing SO, gifted me a lighting system for winter photos, or night time shoots; last year for my birthday. That way, I can still get my food photography in when I have time and I don't have to rely on the weather. Anyway, about these meatloafs....


These meatloafs have changed my life. My SO and the kids love meatloaf, but I'm not a big fan of how long it takes to cook. After cooking and serving people all day, I love quick and easy recipes for dinners at home. So, I decided to try and make mini meatloafs, using my square muffin tin. This would also work in a regular muffin tin. I whipped up our favourite meatloaf recipe and evenly portion them into my muffin pan and baked them. In about 10-15 minutes, they are cooked through and delicious. Which makes getting dinner on the table a snap.

  • they are simple to assemble
  • they cook up in 15-20 minutes
  • you get all the goodness of meatloaf, in half the time
  • they are super cute
  • they can easily be made and frozen for future use

How to make Mini Meatloaf Muffins in 3 easy steps
  1. Combine your ingredients for the glaze- while I like using ketchup, brown sugar, Worcestershire sauce and garlic powder; the glaze can be personalized to suit your tastes
  2. Combine remaining ingredients- ground meat (I have used ground beef, ground turkey and ground moose), with eggs, bread crumbs and seasonings.
  3. Place in pan and bake- divide the mixture evenly into the muffin tin wells, top with glaze and bake for 15-20 minutes.
Can Mini Meatloaf Muffins be frozen?

That is the beauty of these meatloaf muffins; they are the perfect freezer meal!

Cook and freeze- these meatloaves can be frozen after being cooked. Simply let them cool completely and place them in a freezer safe container, layering parchment paper in between. 

Assemble and freeze- if you prefer freezing these meatloaf muffins raw, simply assemble them, and freeze them in the muffin tin. Once frozen, dip the bottom of the muffin tin in hot water to loosen the meatloaves enough to remove them from the tin. Place them in a freezer safe zip top bag, layering with parchment paper.

To thaw- pull the meatloaf muffins out of the freezer 1 day before using and place in a muffin tin. Cover with plastic wrap and place in the fridge to thaw. 

Reheating cooked meatloaf muffins- return the meatloaf muffins to a muffin tin, cover with foil and bake at 350 degrees F for 10 minutes (until the internal temperature reaches 165 degrees F).

Equipment needed for this recipe
  • mixing bowls (1 large, 1 small)
  • 12 count muffin tin
  • measuring cups and measuring spoons
  • mixing spoon
Mini Meatloafs

1 lb lean ground beef
1 small onion, finely chopped
1 egg
1/4 C Parmesan cheese
1/4 C Panko bread crumbs
3 Tbs ketchup
1 tsp oregano
1 tsp basil
1 1/2 tsp garlic powder
1/2 tsp coarse sea salt
fresh ground pepper
Glaze
1/4 C ketchup
1 tsp Worcestershire sauce
1 tsp garlic powder
2 Tbs brown sugar


Preheat oven to 350 degrees F.

In a small bowl, combine the glaze ingredients and set aside.

In a large bowl, combine the ground beef with the onion, egg, Parmesan, bread crumbs, ketchup, basil and oregano, garlic powder, salt and pepper; making sure not to over work the meat.

Evenly divide the meat into a 12 count muffins tin. Even out the tops and spread with glaze.

Bake in preheated oven for 10-15 minutes, until cooked through and meat begins to pull away from the sides of the pan. Let rest 5 minutes, before removing from muffin tin.

  5. I do love meatloaf and any way that I can have it on the table in a short period of time, it is a blessing to me. Thank you for sharing this fantastic and short version of it.
    It is true that the light is a blogger worst nightmare, 5 minutes can go from a perfect shot to well.... I guess I miss it :)
