Simple Apple Pie Parfaits

 Warm spiced apples are layered with orange scented bread crumbs and pecans, in this delicious and simple Fall parfait. Perfect for a busy night, where dessert is a must!

October has arrived and I am in the autumn mood. Even though we are still enjoying the warm temperatures, it has been gloomy and the sun is setting earlier every evening. When Autumn arrives, I start craving the comforting warm flavours of apple desserts. There is just something about the smell of apple and cinnamon that makes my heart happy. While we do enjoy apples all year round, the cooler weather lets us fire up the oven, to enjoy some homemade baked goodies. 

The kids wanted dessert the other day, and I was exhausted from work. I thought about making apple crisp, but I had yet to do groceries and we were low on ingredients. While taking inventory of what I had, I grabbed some panko bread crumbs, butter and sugar and came up with a plan. I took the apple crisp idea and decided to turn it into some parfaits instead. Layers of warm tender spiced apples, alternate with crunchy orange flavoured panko bread crumbs and pecans. Some whipped cream to garnish and VOILA, a really delicious dessert. (ice cream would also be awesome on top!) The panko bread crumbs got SO crunchy, as I sauteed them with some melted butter, a bit of fresh orange juice and some orange zest, A bit of brown sugar and pecans, bring wonderful flavour and texture to the bread crumbs. I wanted the dessert to be slightly warm, without baking it, so I sauteed my apples in a mixture of butter, sugar, spices and orange juice. The flavours and aromas are intoxication and this dessert is perfect for a lazy night!

What is a Parfait?
Parfait which originated in France, describes two types of dessert. In France parfait is made with a custard-like puree. In the Americas parfaits typically consist of layers of nuts or granola, yogurt, fruit and topped with whipped cream.

Are Panko Bread Crumbs and Bread Crumbs the same?
Panko is made from crustless white bread that has been processed into flakes and dried. They have a flaky consistency that is more dry than regular bread crumbs, which makes them great for frying, as they absorb less oil.

Is Panko healthier than Bread Crumbs?
Panko is a great healthier alternative to bread crumbs, when cooking, due to them being lower in sodium, fat and calories. Their larger flakes adds wonderful texture to dishes.

Equipment needed
  • Non stick skillet (2)
  • zester
  • sharp knife
  • cutting board
  • measuring cups and spoons
  • rubber spatula
  • parfait glasses, or half pint mason jars

Apple Parfait


Apple Pie Parfaits
(makes 2 small parfaits)

1 C panko bread crumbs
4 Tbs butter, divided
4 Tbs fresh orange juice, divided
1 tsp orange zest
4 Tbs dark brown sugar, divided
1/4 C pecan pieces
3 apples, peeled and cored, chopped
1/4 C water
1 tsp cinnamon
1/4 tsp cloves
whipped cream or vanilla ice cream for topping

In a non stick skillet, melt 2 Tbs of butter with 2 Tbs of orange juice and orange zest, until bubbling. Add in the panko bread crumbs and toss to coat. Cook over medium heat, stirring frequently until bread crumbs begin to brown; about 2 minutes. Stir in 2 Tbs brown sugar and pecans and cook until pecans have been warmed through; another 2-3 minutes. Set aside.

In a separate skillet, melt the remaining 2 Tbs of butter, with the remaining 2 Tbs brown sugar and 2 Tbs orange juice. Once butter is melted, add in apples, cinnamon, cloves and water and cook over medium heat until apples start to become tender and liquid become thick; about 5 minutes.

To assemble: place 1/4 C of the bread crumb mixture in the bottom of a half pint mason jar. Top bread crumbs with 1/4 of the apples, tapping the jar lightly on the counter to even them out. Top apples with 3 Tbs of bread crumb mixture and repeat with another 1/4 of the apples; lightly tapping the jar on the counter, to settle the apples and bread crumb mixture. At this point, you can top the parfait with whipped cream, or vanilla ice cream and 1 Tbs of the bread crumb mixture. Repeat with second mason jar.
