An easy overnight oat recipe, is the perfect healthy breakfast for busy mornings. You can customise it to suit your tastes with a variety of toppings!
As I've mentioned in previous posts, over the past year, I've been working on my eating habits. I put on quite a bit of weight after I started dating my SO (hello feeling secure in a relationship!) and put extra weight on during the first few months of the pandemic. As someone who loves food and spent the majority of her life being hungry, being pain free for the last 11 yrs has caught up to me.
I've never been a skinny person. Even growing up I was always the chubby kid. I happen to look very sickly when I'm skinny. My body composition is one that needs a bit more meat on it's bones. That being said, I've gotten to the point where I just felt horrible. I was in pain everyday- my back, my knees, my hips..... I woke up in pain, I went to bed in pain. It was not fun.
Since I decided to buckle down and get very serious about my lifestyle change, I feel great. I rarely have lower back pain anymore. I can sleep better since my hips no longer hurt and I have a ton more energy! Isn't it crazy how eating more whole foods, less sugar and preservatives, can make the world of difference? I thought I was eating pretty healthily, until I started focusing on what I was actually putting into my body everyday.
One the the new habits I've started, is to eat breakfast. I use to wait until lunch time to eat my first meal of the day. Or if I did eat, it was something packed with sugar, fat and carbohydrates. I've started boiling a bunch of eggs to have during the week and I also make a batch of overnight oats, to have in the fridge, for a healthier and easy breakfast option.
What are Overnight Oats?
Overnight oats, is a no cook method of making oatmeal. Instead of cooking the oatmeal on the stovetop, the oats are soaked in milk overnight. This allows the oats to soften and soak up the liquid, making them ready to eat. You could rush it and let the oats soak for 2-3 hrs, but they are way better if left to soak overnight. Which is where the name Overnight Oats came from.
What are the health benefits of Overnight Oats?
Oats happen to contain more protein that most grains; about 5g per serving to be exact.
They are high in antioxidants, which rid the body of free radicals, helping fight against certain diseases.
They are low in saturated fats and cholesterol, which helps reduce the risk of heart disease.
Oats are high in fiber, helping you feel full for longer periods of time and can help in healthy weight loss.
What ingredients are in Overnight Oats?
Oats- this is your primary ingredient. Make sure to use a large flake old fashion oatmeal and not quick oats.
Milk- you can start playing around here a little if you'd like. If you can't tolerate dairy, feel free to use your preferred plant based milk.
Sugar- most recipes will call for honey or maple syrup to sweeten the oats. In this case I am using a Monkfruit sweetener, as a low calorie alternative.
Fruit- in this recipe I also use ripe banana to cut down on the amount of sweetner. You could also use unsweetened applesauce, to make an apple pie version.
Flavouring- vanilla extract, cinnamon, cocoa powder and powdered peanut butter are all delicious flavourings to add to overnight oats.
Toppings- this is where you can get creative! Berries, apples, banana slices.... the possibilities are endless. Nuts and seeds are also a great addition, and many seeds such as chia seeds and hemp seeds can add wonderful nutritional value. I've also added yogurt and nut butters to my overnight oats, before eating them.

Serve in a bowl or mason jar and top with desired fruit, nuts, yogurt, nut butters, etc.
I make the same overnight oats but instead in a mason jar! They’re SOO good!

DeleteI make PB oats often and sometimes add chocolate chips, but have never tried cocoa powder instead! They look great with all of that fresh fruit
