Oven Baked Puffed Pancake

 A light and creamy oven baked pancake, is a simple and impressive dish, perfect for brunch or breakfast. With only 5 ingredients, these pancakes come together in a snap and are a great healthy protein packed breakfast.

Spring had finally sprung in full force and we were totally enjoying it. We had many gorgeously sunny and hot days a few weeks ago, but then the temperatures dropped and we even got snow. The warmer weather had us excited for spring, and the sun made me long for the beach. After such a cold winter and a being in hibernation mode, many of us feel as though our bodies aren't warm weather ready. I personally have been trying to incorporate more protein and vegetables in my diet, and cut back on sugars and carbs. One way I've been increasing my protein is with cottage cheese. With 15g of protein in every half cup of cottage cheese, it's a great and healthy way to get that extra energy boosting protein into your diet. And I just love thick and creamy cottage cheese, either for breakfast, or as an addition in recipes such as my Keto Meatloaf!

I now love to top my baked potatoes with cottage cheese and salsa, which is a delicious and creamy twist. I can even be found eating a bowl of cottage cheese with fresh berries and a drizzle of maple syrup. Recently I decided to try adding cottage cheese to my puff pancake recipe. They aren't as heavy as regular pancakes and have little to no sugar, or flour in them. Puffed pancakes are made with eggs, milk, flour and vanilla. The addition of cottage cheese is a wonderful way to increase your protein intake.

I went into the kitchen and made my recipe, subbing in some cottage cheese for most of the milk, in my recipe. My first attempt was a total FAIL. My pancake did not puff at all, though it tasted great. So, back to the drawing board I went. This time I decided to mix everything in my food processor and I added in an extra egg. Perfection! The pancake puffed beautifully in the oven. The kids totally devoured a good portion of this one. It was light and the inside was slightly creamy and salty. Topped with fresh berries and a drizzle of honey, this pancake is a great light breakfast, that will give you the fuel you need to start your day, and is a great way to start getting your body warm weather ready.

What is a puffed pancake?

Puffed pancakes are also know as dutch babies, or German pancakes. They are typically make with eggs, flour, milk and vanilla. Baked in a non stick or cast iron skillet, these pancakes puff up as they are baking and deflate when they cool.

How to make a puffed pancake

Butter is melted in a non stick, or cast iron skillet; while your oven is preheated.

Meanwhile, eggs, milk, cottage cheese and flour are placed in a blender pitcher and blended until smooth and creamy.

The batter is then poured into the preheated skillet and baked for 15-20 minutes; until nicely puffed and golden.

Remove from oven and dust with powdered sugar before serving. Serve with fresh berries, or apple slices and a drizzle of honey/maple syrup.

Equipment needed for this recipe

  • Blender
  • non stick skillet or cast iron skillet
  • measuring cups and spoons
  • spatula
Oven Baked Puffed Pancake

1/4 C 2% Cottage Cheese
2 Tbs low fat milk
2 large eggs
1/4 C flour
1 Tbs butter

Preheat oven to 400 degrees. Add butter to an oven safe 8 inch non-stick, or cast iron skillet and place in the oven to melt the butter.

Place cottage cheese and milk into a blender, or food processor; blend until smooth and creamy. Break in the eggs and add the flour, and blend until completely smooth and bubbly.

Pour batter into the hot skillet and return it to the oven for 17-20 minutes, until nicely puffed and slightly golden. Remove from oven and dust with 1 tsp powdered sugar (if desired) and top with fruit. Serve with a drizzle of honey, or maple syrup.

  4. So, one of my all time favorite things to eat is baked potatoes with cottage cheese! I thought I was the only one. I can't wait to try your pancakes with cottage cheese. These sound delicious and I love how puffy they get!
