Gluten Free Egg Roll in a Bowl

Looking for a quick and healthy meal, sure to satisfy the pickiest of eaters? With only a handful of fresh ingredients, egg rolls in a bowl comes together in under 30 minutes, and is a delicious and quick meal for a busy night.
Are you craving Chinese takeout but don't want all that sodium, sugar and oil? Well have I got a meal for you. Packed with all the delicious Asian flavours of egg rolls, this egg roll in a bowl recipe is a healthy, gluten free and low carb way to cure that craving. This recipe can be made all year long, when you get a hankering for Chinese takeout. Using store bought coleslaw mix, helps simplify this delicious and low carb recipe.

For the last month I've been trying to get back on track with my self care. I took what was suppose to be a short break at Christmas and just never got back into the swing of things. When I say I fell off the wagon, I fell off hard! With all the Christmas sweets, my birthday, both my kids Birthdays, Valentine's day and Easter, it's been a non stop revolving door of sugar in this house. And unfortunately I have a weakness for anything sweet.

Seeing how successful my SO's mom has been doing on Weight Watchers, I decided to check it out with the help of a friend referral. It gives me the chance to try WW for 1 month, at no cost and also gives my SO's mom 1 month free. Over the last few days, I've been acquainting myself with the app and browsing the hundreds of recipes available. After assessing my eating habits, I was placed in the BLUE team, which has many zero point foods and is a little more forgiving. The last time I tried WW (about 9 yrs ago), I failed miserably, mostly due to my IBD. My digestive tract could not handle all the fruits and veggies I was required to eat. This time around, you can find recipes that contain breads, pasta, flour and sugars in them. The difference is you have more points, and more of a variety of zero point foods to choose from. The other night I needed a snack before bed and only had one point remaining. I checked my zero point list of foods and decided on having a banana before bed. Not only did I sleep better, not going to bed hungry, it helped me make a healthy decision, rather than reaching for potato chips, or ice cream. The app helps track your activity and sleep patterns, offers workouts and workshops, and has hundreds of recipes. Everything to set you up for success. I realized I needed a platform that I needed to track things on, to get my motivation back! It is such a simple recipe to make, which is what caught my eye. We love Chinese food and egg rolls, and this recipe really does taste like the filling inside the egg roll. My son did miss the crunchy wonton wrapper, but we really enjoyed the recipe. I decided to add bean sprouts into the meal, as I was making it, to add a bit more nutrition and make it a bit more filling. Plus, bean sprouts are ZERO points on WW! Which made this whole recipe only 2 WW points on team BLUE. 

What is Egg Roll in a Bowl?

Egg roll in a bowl is pretty much what it sounds like. It is a mixture similar to egg roll filling, served in a bowl, rather than an wonton wrapper. Ground meat, in this case ground turkey breast, is cooked with a mixture of cabbage, carrots, bean sprouts and Asian seasonings, for the most delicious, satisfying, low carb recipe that is Weight Watcher's friendly.

What ingredients are in Egg Roll in a Bowl?

Turkey- the protein base for this recipe is ground turkey. Any ground meat can be used, but using ground turkey helps keep the calories down in this dish.

Cabbage and carrots- to simplify this recipe, store bought bagged coleslaw mix is used. You can also shred and julienne your cabbage and carrots yourself if you prefer.

Bean sprouts- full of vitamin C and Calcium, bean sprouts add an extra crunch to this dish.

Liquid Aminos- concentrated amino acids derived from soybeans, liquid aminos is a wonderful gluten free alternative to soy sauce, as it is rich in umami flavour.

Asian seasonings- such as ginger, garlic, sesame oil, rice wine vinegar, green onion and sesame seeds.

How to make Egg Roll in a Bowl

Begin by browning the ground turkey in a non-stick skillet sprayed with olive oil spray.

Add in the coleslaw mix, ginger, garlic and rice wine vinegar. Cook until cabbage begins to wilt.

Add in bean sprouts, liquid aminos and sesame oil, and cook until heated through.

Serve in a bowl and garnish with green onion and sesame seeds.

Equipment needed for this recipe
  • Large non-stick skillet
  • tongs, or wooden spoon
  • measuring spoons
  • colander
  • sharp knife
  • cutting board
Egg Roll in a Bowl

Olive oil cooking spray
1 pkg (454g) ground turkey breast
1 pkg (397.5g) coleslaw mix (shredded cabbage and carrots)
4 cloves garlic, minced
1 inch (30g) fresh ginger root, minced
1 pkg (1 lb) bean sprouts
3 Tbs rice vinegar
2 tsp sesame oil
3 Tbs liquid aminos (or gluten free soy sauce)
1 tsp sesame seeds
1/4 C green onion (green tops only), thinly sliced

Spray skillet with cooking spray and preheat over medium high heat. Add in the ground turkey and cook fully. 

Using your sharp knife, mince the garlic and ginger root and add to the cooked turkey. Add in coleslaw mix and rice vinegar, mixing to combine. Stir fry the mixture until the cabbage begins to soften and wilt.

Add in the bean sprouts (which have been rinsed in a colander), liquid aminos and sesame oil, and combine well. Cook until bean sprouts begin to wilt and are heated through.

Serve in a bowl, and garnish with green onion tops and sesame seeds.
