This easy to make homemade pizza is topped with tender slices of sweet potato, chickpeas, spinach and rich caramelised onion. It is a healthier take on traditional pizza, that will leave you satisfied.
My family is crazy for pizza. I'm sure if they could, my son and my SO would eat pizza everyday. There is just something about a nice chewy crust, tart tomato sauce and salty cheese, that just tastes like heaven. While I enjoy a good slice of pizza, I also love to make non traditional pizzas and rarely order traditional pepperoni and cheese for myself. This pizza came about when I wanted something a little different during our homemade pizza night. Since I am not a big meat eater, I decided on a meatless pizza. This recipe can easily become vegan, by using your favourite vegan cheese, rather than mozzarella.
I've always been a fan of sweet and salty flavour combinations, so I love sweet caramelised onion with cheese. I knew I wanted onions as my base and since I had a leftover baked sweet potato, I decided to thinly slice it, adding it to my pizza as well. Wanting protein, I also decided on buttery chickpeas; one of my all time favourite foods. The result was an addictive, sweet and salty combination of flavours.
Equipment needed for this recipe
- stand mixer or bread machine (if desired)
- large bowl
- measuring cups and spoons
- 1 14" pizza pan (I used a pizza stone)
- skillet
- sharp knife
3 Tbs olive oil
1 Tbs brown sugar
1 Tbs balsamic vinegar
a pinch of salt and pepper
1 small cooked sweet potato, peeled and thinly sliced
1 C cooked chickpeas, drained and rinsed
1/4- 1/2 tsp crushed red pepper flakes
1/2 C frozen spinach, thawed and squeezed dry
1 C mozzarella cheese, shredded (or favourite vegan cheese)
1 Tbs fresh thyme, chopped
Crust:
1 package (2 1/4 tsp) Rapid Rise Yeast
3/4 tsp salt
1 C very warm water (120 to 130 F)
2 Tbs olive oil
Cornmeal
Preheat oven to 400 degrees
In large bowl, combine 1 cup whole wheat flour, 1 cup all-purpose flour, undissolved yeast, and salt. Stir very warm water and olive oil into dry ingredients. Stir in enough remaining all-purpose flour to make soft, but not sticky, dough. Knead on lightly floured surface until smooth and elastic, about 4 to 6 minutes. Cover; let rest on floured surface 10 minutes. Lightly oil round pizza pan and sprinkle with cornmeal. Shape dough into smooth ball and roll dough to fit pan.
In a skillet, heat the olive oil over medium low heat. Add the onion, toss to coat and cook until the onions start to become a nice golden colour; about 15 minutes. Add the brown sugar, balsamic vinegar and season with salt and pepper; cook for a few minutes more, until nicely golden brown. Spread caramelised onion over rolled out pizza dough.
Place sweet potato slices over caramelised onion and sprinkle with chickpeas and spinach. Season with desired amount of crushed red pepper. Toss mozzarella cheese with thyme and sprinkle over toppings. Bake for 15-20 minutes; until crust is golden brown around the edges.
