Irish Apple Cake

 This traditional Irish cake, has beautifully tender crumb and is studded with slightly tart apples. The warm spices and clove make this an intoxicating dessert, perfectly paired with a cup of tea, or coffee.

Being a food blogger, it seems like you need to be on top of every single food trend, or holiday, or be left in the dust. Many blogs have been posting St. Patrick's Day recipes for weeks, but I haven't really thought about it until last week. I figured I should get at least a few recipes up, for this time of year. It seems like every single blogger out there is posting some fun, imaginative, creative and unique St. Patrick's Day recipe. It's hard to post a recipe, without somebody somewhere thinking their idea has been copied. So, I decided to stick to more traditional recipes that you might possibly find in Ireland. Like this Irish Apple Cake.

Simple yet delicious recipes such as this one, have been passed down through generations in Ireland. Said to have been primarily made with crab apples, which are native to Ireland, these cakes were steamed in pots by the fire. As the cake was cooking, the smell of the cloves and cinnamon were extremely intoxicating. When I opened the oven door to check if the cake was done, I was pleasantly surprised to see how pretty this cake looks. The cake is moist, studded with tart apple and everything is wrapped in a blanket of warm clove and cinnamon.


Irish Apple Cake

2  flour
3 tsp baking powder
pinch salt
1/2 tsp ground cloves
1/2 tsp cinnamon
1/2 C unsalted  butter, softened
4 cooking apples, peeled, cored and sliced
3/4 cup granulated sugar
2 eggs
1 to 3 tablespoons milk
1 to 3 tablespoons granulated sugar (for topping)

Preheat oven to 375 degrees F.

Grease an 8-inch spring form pan and line bottom with parchment paper to fit.

Sift flour, salt, cinnamon and ground cloves into a large bowl. Cut in the butter until the mixture resembles fine crumbs. Add the apples and sugar to the flour mixture. Stir in the eggs and enough milk to leave the dough stiff. Pour into the prepared pan. Sprinkle with the remaining sugar.

Bake for 45 minutes until crisp and golden in colour.

Run a knife around the edge of the spring form pan and let cool completely before removing the side. Serve with a drizzle of cream, whipped cream, or vanilla ice cream.

  8. I feel like this is so amazingly moist. I have never had it but its just so beautiful. I love the addition of the apples and anytime apples are combined with sugar, cinnamon and cloves you know the cake will be so delicious.

  20. I can pass up chocolate cake very easily but apple cake well you have me mouth watering and enthused... This is a fantastic recipe... I am not sure I will be waiting until St Patricks day to try it though ha ha

Light and fluffy cherry and whipped cream filling is rolled in an airy sponge cake. 13 years ago, I made a dinner that I was totally proud of. Not only did it taste wonderful, it looks fantastic too. I was so proud of myself that I took a photo, which I wanted to share with my friends and family. Only I didn't know how I could share it with everyone, at the same time. What's  for Dinner?, as a way to share recipes with my famil
