EASY Almond Joy Brownies

 These decadent chocolate and coconut brownies might look fancy, but they are super simple to make. Using a box mix, these delectable semi homemade treats are sure to impress. 

I am a sucker for sweets. Baking has always been my favourite way to relax. I just love how you can throw together a bunch of ingredients, and it bakes up into something delicious and sinful. While I am trying to be more mindful of the foods I am eating, sometimes you just need to indulge. Everything in moderation is my motto; otherwise you'll find me on the couch eating a whole package of Oreo cookies!

Almond Joy is a type of American candy bar, which consists of coconut and a few whole almonds, covered in chocolate. Here in Canada we have a similar candy known as Bounty Bars, however they do not have almonds. They have always been one of my favourite candy bars and as of late I've been obsessed with coconut.

I first had these brownies years ago, when a long time friend brought them, during one of her visits. The kids raved about them and we all made those "omg this is so good" moans while eating them. I've thought about these brownies often over the years, always planning on trying to make them. I don't use boxed mixes often, but sometimes when they are on sale, I'll pick a few up to have something quick and simple on hand.

Equipment needed to make this recipe

  • 12 count muffin tin
  • mixing bowls 
  • measuring cups and measuring spoons
  • mixing spoons/spatulas

Almond Joy Brownies

1 box of family size Chocolate Fudge brownie mix
1 (14 oz.) can sweetened condensed milk
1 (14 oz.) bag coconut
1/4 C milk
1 C chocolate chips, melted
1/4 C almonds (or nuts), crushed
1/4 C coconut oil

Preheat oven to 350 degrees.  Generously grease a 12 count muffin tin with coconut oil.

Make brownies according to package directions and pour batter only half way up the wells. Bake in preheated oven for 12 minutes. 

While they are baking, mix the coconut, sweetened condensed milk and milk together. Remove brownies from oven and spoon on some sweetened coconut. Place back in oven and continue to bake an additional  14-16 minutes.

Remove from oven and allow to cool completely before removing, by gently running a knife around each brownie. Drizzle on the chocolate then sprinkle on the almonds

  8. Coconut, almond and brownies... this is like all my favorites in one recipe. Plus it is so easy to make. I never tried it before, but the pictures are mouth watering. I will make it as soon as I can. Thanks for the recipe!
