Crock Pot Tuscan Chicken

 This mouthwatering crock pot chicken recipe features sweet, salty and earthy flavours of Tuscany. Slow cooked all day the chicken is fall off the bone tender and the sauce is simple yet full of flavour. 

Before the pandemic, when I used to work, the crock pot was my best friend. It was so easy to prepare everything the night before, throw it all in, turn it on and forget it; only to return home to the house smelling like heaven. Now that I can not work, I don't bring the crock pot out that often. I do use it for ribs and pulled pork, but since I have tons of time on my hands I usually just whip dinner up in the evening. 

I recently purchased chicken thighs with the intention of making Crock Pot Lemon Chicken. Then I remembered that my SO is not crazy about lemon, so I decided to make something he would be more inclined to like. I love that he is Italian, because Italian food has always been something I've loved cooking and eating. I didn't want this recipe to be too time consuming, so I went the simple route with minimal spices and some delicious white wine. 

The chicken was tender, the sauce paired perfectly with the pasta, which soaked up all that delicious flavour. 


Tuscan Chicken with Sage


2 Tbs extra virgin olive oil
1 onion finely, chopped
2 cloves garlic, grated
1/2 tsp coarse sea salt
1/2 tsp fresh ground pepper
1 tsp ground sage
1/2 tsp dried basil
1 C dry white wine
6 bone-in skinless chicken thighs
1 box of fettuccine noodles
4 C broccoli florets

In a skillet, heat the oil over medium heat. Add the onions and cook until translucent; about 3 minutes. Add the garlic, salt, pepper, basil and sage; cook for one minute. Add in the wine and bring to a boil. Cook for about 5 minutes, until the wine has reduced by one third.

Place chicken in the bottom of a 2 qt slow cooker and pour wine reduction over the chicken. Cover and cook on low for 6-8 hrs.

Remove chicken from slow cooker and loosely cover with foil. Let rest while you cook the pasta.

Bring a large pot of salted water to a boil. Add in the pasta and cook according to package directions; adding the broccoli in for the last 5 minutes of the cooking time. Drain and return to the hot pot. Pour the, strained cooking liquid from the slow cooker over the hot pasta and toss. Serve pasta in a large shallow bowl, with chicken on top.

  7. I love dishes with white wine, it adds so much flavor! Plus anything made in the crock pot has my name on it, especially something served with pasta!! Yum!
