Spicy Avocado and Caramelized Onion Quesadillas

 Sweet caramelized onion, is paired with creamy avocado, spicy salsa and cheese, in crisp flour tortillas.



I've been on a quesadilla kick lately. There are so many ways you can stuff them and they are so easy to make. I've always LOVED tortilla wraps, to the point where I order wraps everywhere I go. There is just something about tortillas that make everything taste delicious! I usually make cheese and veggie quesadillas, adding leftover protein here and there, but since the kids and I are not big meat eaters, they are happy with veggies and cheese. 

Since I was cleaning out the fridge, before my next grocery order, I took this opportunity to make quesadillas with things I needed to use up. Half onions (I found 3!), avocado that needed to be eaten, salsa close to it's Best Before date. I'm a huge fan of caramelized onions, craving them lately, so I wanted to try making my quesadillas with them. I knew avocado would pair nicely, so I threw that in too. The result was a slightly sweet, spicy and creamy quesadilla. They were awesome and a total hit. A perfect, quick meatless meal!




Spicy Avocado and Caramelized Onion Quesadillas

1 1/2 medium onion, thinly sliced
2 Tbs olive oil
salt & pepper
1/2 tsp brown sugar
1 Tbs balsamic vinegar
2 avocados, thinly sliced
medium or hot salsa
1/2 C Colby Jack cheese
6 flour tortillas

In a small skillet, heat the oil over medium low heat. Add in the onions and toss to coat with the olive oil and season with salt and pepper. Cook for 10 to 15 minutes, stirring occasionally, until onions are soft and golden brown. Add in the balsamic vinegar, sprinkle with brown sugar and toss to coat. Remove from heat.

In a clean skillet, over medium heat place 1 flour tortilla. Sprinkle with a pinch of cheese, and spread with a thin layer of salsa. Add 1/3 of the caramelized onion and a few slices of avocado. Sprinkle with a second generous pinch of cheese and top with a second flour tortilla. Cook for 2 minutes, or until tortilla starts to brown. Carefully flip and cook on the second side for 3 minutes; until tortilla starts to turn golden brown. Remove from skillet and repeat with remaining 4 tortillas.

Let cool for 5 minutes, before cutting.

  5. Ooooh I love this twist on the classic quesadilla! Sometimes cleaning out the fridge of random ingredients works out really well & this looks like it did just that! Plus, avocado with anything is just amazing anyway 😂
