Cowboy Bark

 This dark chocolate bark is topped with pretzels, oreo cookies, toffee, peanuts, almonds and coarse sea salt. Making it a fast, easy and oh so satisfying treat!

Many summers ago, while the kids and I were visiting my their grandma in the U.S, she took us to Trader Joe's. The store was relatively new in her area, and she knew that me being a foodie, I would LOVE to go check it out. Living in Canada, I have heard several U.S bloggers mention Trader Joe's and how fantastic it is. So I was excited to go. 

It is a total foodie paradise!! Everywhere I turned I saw something I had never seen before and that looked and sounded amazing. I paced myself and only purchased a few items; one of them being their Cowboy Bark. I could not resist the combination of dark chocolate, pretzels, nuts, toffee, Oreo cookies and sea salt. I pretty much inhaled the bark myself and decided that I needed to recreate it here at home. 

I always make chocolate bark for Christmas, so this year decided to make Cowboy Bark. Everyone loved the combination of sweet, salty and crunchy. I am excited to have it grace my cookies trays this year! This bark is super easy to make and is out of this world delicious. This would be an awesome homemade Valentine's day treat for any "cowboy" in your life :o)





Cowboy Bark

2-3 C good quality dark chocolate
1 C small pretzel twists
1/2 C lightly salted roasted almonds
1/2 C lightly salted roasted peanuts
1/3 C toffee bits
12 Oreo cookies, broken into pieces
a few pinches or coarse sea salt

Line a rimmed baking sheet with parchment paper and set aside.
In a microwave safe bowl, melt the chocolate, using 30 second intervals. Stir until smooth. Pour onto parchment lined baking dish, using a spatula to spread out into a even layer (does not have to fill the entire baking sheet).

Working quickly, sprinkle nuts, toffee bits and cookie pieces over the bark. Place pretzels onto bark and press down gently to make sure they are touching the chocolate. Sprinkle everything with a few pinches of coarse sea salt.
Place in fridge, or freezer to set. Once set, take hold of both pieces of parchment and drop it onto a flat surface, to break up the bark. Break any stubborn pieces with a large knife. Store in an air tight container for up to 5 days, or in the freezer for up to one month.
