The BEST Scalloped Potatoes with Bacon

 A combination of Swiss, Gruyere and smoky bacon are the star in these creamy scalloped potatoes. Making them the BEST scalloped potatoes you've ever had!


There is just something so comforting about potatoes. Maybe it's because they are so versatile. You can mash them, roast them, bake them, fry them, or you can layer them with cheese and bacon and bathe them in cream, for my favourite way to eat potatoes- scalloped potatoes!

These are so indulgent that I only make them once a year. Especially now that I have started to be mindful of what I'm eating. But sometimes the occasion (or craving) calls for something sinful. So sinful, that I really don't know what words to use, to describe them. Spectacular, astounding, stupendous, marvellous..... all of these words come to mind. 

These potatoes are the perfect side dish for holidays. I've made them for Easter, for Thanksgiving and for Christmas. Whatever the occasion, these potatoes always win me several compliments and requests for the recipe. So now you can WOW your loved ones with possibly the best scallop potato recipe ever.




Scalloped Potatoes with Bacon

6-8 medium Yukon Gold potatoes, thinly sliced
1 medium onion, thinly sliced
4 green onions, chopped
1 lb bacon, cooked and crumbled
2 C Swiss cheese, shredded
1 C Gruyere cheese, shredded
2 tsp fresh thyme
salt and pepper
3 C whipping cream
1-2 C milk

Preheat oven to 350 degrees. Generously butter a 2 1/2 qt casserole dish.

Using a mandolin slice the potatoes and onion, to thin slices. I used setting #2 on my Pampered Chef, slicer.

In a bowl, combine the Swiss and Gruyere cheeses. Set aside.

Completely cover bottom of casserole dish with one layer of potatoes (overlapping slightly). Season with salt and pepper and 1 tsp fresh thyme. Sprinkle with thinly sliced onion, 1 C of cheese, 1/3 of the crumbled bacon and 1/3 or the green onions. Repeat layers, only seasoning every other layer of potatoes and topping the final layer with cheese.

Slowly pour cream around edges of casserole dish to evenly distribute the cream. Slowly add 1-2 C of milk, pouring around edges of potatoes, until liquid comes 3/4 of the way up the potatoes. Cover and bake for 2 hrs; until potatoes are tender. Remove cover and cook 30 minutes; until the top is bubbly and browned. Let sit 20 minutes before serving.

  2. These look so good. I think they would be so nice for a Sunday dinner! My family used to make scalloped potatoes with cream sauce and ham but I think cheese and bacon sounds like a serious upgrade!
