Baked Pizza Spaghetti

 Spaghetti is tossed with pizza sauce, meats and cheeses, for the ultimate baked pasta.

Fall is in full force and the temperatures have dropped quickly. With all this cold and dreary weather, it seems like my body wants to go into hibernation mode. Naps, blankets, tea/hot cocoa and hearty foods. So casseroles like this one, are right up my alley this month. I love the ease of baked pastas. I love the crispy melty cheese on top, the tender pasta and hearty meat, all cooked in sauce. HEAVEN!! 

The kids absolutely love this "pizza-ghetti" as they liked to call it. Now that they are teenagers, I need something low cost but filling. They like to eat me out of a house and home. Super simple and very reminiscent of lasagna, this recipe is sure to give your family the fuel it needs to keep going during the colder months of the year!







Baked Pizza Spaghetti

12 oz uncooked spaghetti
1 lb  Italian pork sausage
2- 14 oz jars pizza sauce
3/4 cup diced pepperoni
1 cup ricotta cheese
1/3 cup grated Parmesan cheese
2 eggs, beaten
2 cups shredded mozzarella cheese
Fresh basil, if desired

Heat oven to 350ºF. Spray 13x9-inch baking dish with cooking spray. In a large pot, cook and drain pasta as directed on package, using minimum cook time. Return spaghetti to the pot.

While the pasta is cooking, heat a skillet over medium heat. Cook sausage until no longer pink; drain. Add to the pot with, spaghetti, pizza sauce and pepperoni.
   
In medium bowl, mix ricotta cheese, Parmesan cheese and eggs. Spoon half of spaghetti mixture into the baking dish. Dollop with ricotta mixture; spread evenly over top. Sprinkle with 1 cup of the mozzarella cheese. Top with remaining spaghetti mixture. Sprinkle with remaining 1 cup mozzarella cheese.
  
Bake uncovered 30 to 35 minutes or until bubbly. Garnish with basil.

  3. I'm almost afraid to make it because I KNOW that The Man will demand it all the time. Maybe I'll just start out with quadrupling the recipe and freezing some! Looks so good.

Light and fluffy cherry and whipped cream filling is rolled in an airy sponge cake. 13 years ago, I made a dinner that I was totally proud of. Not only did it taste wonderful, it looks fantastic too.
