Chocolate Cherry Macaroons

Chewy coconut macaroons are packed with sweet Maraschino cherries and dipped into dark chocolate; making them the BEST macaroons you'll ever bake!

Macaroons are little desserts made with dried coconut, egg whites and sugar. First originating in southern Italy, they were made with chopped almonds, when the Arabs introduced almonds to the Italians in the eight century. When dried coconut became widely available in the U.S and France in the 19th century, it was soon discovered that swapping coconut for the almonds would lend a sturdier cookie, with a longer and more stable shelf life.

Macaroons are often confused with the French almond meringue cookie, the macaron. Mostly due to English speaking bakers translating the French word, to English. Coconut macaroons, however, have a different French translation- Rochers Coco. While they are both similar, in the aspect that they are both made without flour, they are vastly different in look, taste and texture.

I have always loved coconut, but as I've gotten older, my love has grown. There is just something about the tropical, exotic taste that speaks to my soul. So when thinking of new ways to use coconut, I've always come back to classic macaroons. 

My son had recently been talking about his favourite chocolates, which happen to be chocolate covered cherries, and it gave me a wonderful idea, to mix chocolate covered cherries, with macaroons. After all, macaroons are often dipped in chocolate. 

I absolutely have to say that these are ridiculously, awesome cookies!!! I love the cherry flavour paired with the coconut. It's so addictive! Or maybe that is thanks to the chocolate that covers the bottom of each cookie. No matter what the reason, these are absolutely amazing! Deliciously chewy, with bites of sweet cherry and deep rich dark chocolate; these macaroons as look wonderful as they taste. 

Chocolate Covered Cherry Coconut Macaroons

2 3/4 C shredded sweetened coconut
1/4 C Maraschino cherries, finely chopped and patted very dry
4 egg whites
splash of vanilla
6 oz  dark chocolate, melted

Preheat oven to 350 degrees.

In a small bowl, whisk together the egg whites and vanilla; until egg whites become frothy. In a second bowl, toss the coconut with the cherries. Add egg whites to coconut mixture and mix well to combine; all coconut should be wet and coated with egg whites. Spoon by rounded tablespoons, onto a parchment lined baking sheet. Bake for 15 minutes; until light golden brown. Cool completely, for 20-30 minutes.

In a microwave safe bowl, melt the chocolate for 2 minutes, stirring every 20 to 30 seconds; until melted. Dip bottom of cooled cookies into the melted chocolate and return to parchment paper. Drizzle any remaining chocolate over tops of cookies. Refrigerate cookies, until chocolate has set. Store in fridge for up to 1 week.

  5. I love a bit of history, especially related to foods origins and adaptations! This is perfect! I remember I made macaroons once, a long time ago, but I don't remember if they were any good:)) Perhaps it is about time I tried again, using your recipe!:))
