Keto Pizza Crust

 You'll never miss the carbs, with this KETO pizza crust.

Have you joined the KETO diet craze? While I somewhat understand the benefits of Ketosis on the body, I'm not quite convinced that a diet abundant in cheese, eggs, and bacon could be good for you. BUT I do have several friends who have been/ and still are on a Keto diet and they have lost weight. So in an attempt to help my BFF's husband be able to enjoy pizza, I stumbled upon this recipe. 

At first I was a bit skeptical of a low carb pizza crust. I was sure it was going to include weird flours I could only find at the health food store. I was pleasantly surprised to see that this pizza crust recipe uses ingredients everyone has at home. So when we had pizza night, this past weekend, I gave the crust a try.

I was very anxious to see if it would really work. After all, I had never had to spread my pizza dough in a cake pan before, to bake it, LOL. As it baked, I knew that it was going to be a hit. The smell of baking cheese was intoxicating. Once I topped it and returned it to the oven, I was excited to eat! The kids LOVED the crust, saying it had really great flavour. They couldn't even tell that it wasn't a bread type dough. 

While this was a hit at our house, I don't see myself making this crust more than a few times per year. Recently having had heart issues and now being mindful of what we are eating, I feel like this is just too much of the "bad" fats for my diet.

Keto Pizza Crust (Low Carb)
adapted from Plain Chicken

4 oz cream cheese, softened
2 extra large eggs
1/4 C parmesan
1/4 tsp Italian seasoning
1 C mozzarella cheese, shredded
1 C tomato puree
1/2 tsp basil
1/2 tsp oregano
additional shredded mozzarella cheese for topping
favorite pizza toppings ( we had pepperoni, ham, olive and mushrooms)

In a bowl, combine the tomato puree with the basil and oregano. Set aside.

Preheat oven to 375 degrees F. Line a 9x13 inch baking dish with parchment paper.

In a mixing bowl, beat the cream cheese until smooth. Beat in the eggs, Italian seasoning and parmesan, until well combined. Stir in the mozzarella cheese. Spread cheese mixture evenly in prepared baking dish.

Bake for 20-25 minutes; until browned. Let cool completely on a wire rack. Place cooled crust on a parchment lined baking sheet. Spread with tomato puree and sprinkle with additional mozzarella, and desired toppings.

Bake once again in a 375 degree F oven, for 15 minutes; until toppings are bubbly.

  2. Sounds like fathead dough! Keto doesn't need to be like Atkins filled with bacon and cheese, but there are people who do it that way and still loose weight! Your finished pizza looks delicious!

    1. Thank you! It seems all I see for Keto recipes is bacon and cheese. It definitely would be something I research a great deal more, were I to decide to follow the diet.

  6. The way you described the smell made me want to try it even more! I love the id eww a of the kids loving it, as I have a picky 4 year old. Definitely worth a try. I used to be on the keto diet, but never tried this. My health has changed significantly so, just like you, my diet cannot include many of the foods that the keto does. Trying this for my son :)

Black Forest Roll Cake

Light and fluffy cherry and whipped cream filling is rolled in an airy sponge cake. 13 years ago, I made a dinner that I was totally proud of. Not only did it taste wonderful, it looks fantastic too.
