Halloween Brownies #Blogtober

 Decadent caramel stuffed brownies are topped with charming Halloween characters.

Halloween has always been an exciting holiday in our house. I love all holidays really. I just love the fun and excitement that surrounds holidays. I love seeing things through the eyes of children and I am really just a big kid at heart! That's why any time a holiday rolls around, I have to make some sort of fun food to celebrate. 

As my kids get older, I sometimes wonder if they will still be excited when I create a fun new holiday recipe. I think I have a few more years though, since both thought these brownies were "pretty cool". I had made a recipe similar to this years ago, when my son was 4. But it had called for frosting poured over the marshmallows and just looked really messy. So this time I decided to use modelling chocolate, to cover my marshmallows.



Since it is Halloween, I created 4 characters to top my brownies. Frankenstein, ghosts, mummies and pumpkins. I dipped, I decorated and I was quite pleased with the result! 

My daughter helped bake the brownies and suggested we put pieces of caramel in them. I thought it was a fantastic idea. Boy did she ever hit a home run on these ones. The chewy, soft caramel chunks almost ooze out of the brownie. They add a nice almost salty contrast to the sweet brownies. These are possibly the BEST brownies we have ever made!

Halloween Brownies

Brownies

1/2 C unsalted butter
1 Tbs coconut oil
1 1/8 C sugar
2 eggs
1 tsp vanilla
1 tsp almond extract
1/2 C flour
1/2 C dark cocoa powder
1/4 tsp salt
15 caramels, unwrapped and cut in half
1/2 can sweetened condensed milk
1/2 C semi sweet chocolate chips

Preheat oven to 350 degrees F. Grease an 8x8 baking dish, and set aside.

In a sauce pot, over medium low heat, melt the butter and the coconut oil. Add in the sugar and stir well to combine. Remove from heat and let cool for 2 minutes before mixing in the eggs. Stir in the vanilla and almond extract. Sift the flour,cocoa powder and salt into the pot. Stir well to combine.

Pour batter into greased baking dish and sprinkle with caramel pieces, gently pressing the caramels into the batter.

Bake for 20-23 minutes, until a toothpick inserted in the center comes out with a few crumbs. Let cool slightly before topping with ganache.

For the ganache: in a small sauce pot over medium low heat, combine the condensed milk and chocolate chips. Stir until completely melted and pour immediately over brownies. Let cool completely before cutting.

Marshmallow Characters

16 large marshmallows
1/2 C white melting chocolate
1/2 C green melting chocolate
1/2 C orange melting chocolate
1/4 C swiss melting chocolate

Melt each colour of chocolate, by placing in a bowl and microwaving for 30-45 seconds. Stir until smooth.

Insert a toothpick into each marshmallow. Have a piece of styrofoam, at the ready.

Dip 8 of the marshmallows into the melted white chocolate. Insert each marshmallow into the styrofoam to set. Dip 4 marshmallows each into the orange and green melted chocolates. Insert into styrofoam to set. 

Once white chocolate is set, drizzle 4 of the marshmallows with leftover white chocolate, to create mummy bandages. Return to styrofoam to set.

Dip the tops of the green marshmallows into the melted swiss chocolate, for Frankenstein's hair. Return to styrofoam to set.

Using a toothpick and leftover chocolate, make eyes and mouths for the ghost and pumpkins; eyes for the mummies; eyes, a nose, a mouth and stitches for Frankenstein. Let marshmallows set completely.

**I used pieces of toothpicks dipped into green and brown chocolate, to make the pumpkin stems and Frankenstein's bolts. Make sure to remove before eating!!**
