I originally saw versions of this recipe on Pinterest and it had my tummy rumbling so hard, that I knew I had to make it. I had chicken in the freezer, so decided to make this chicken on a day where I would be at school all day. Nothing like walking into the most amazing smell, when you get home from a busy day of work!

I love that this recipe is so simple, yet it is out of this world delicious. Sweet and savory combine, to coat this tender chicken. It literally fell apart as I tried to remove it from the crock pot. Once tossed with the thickened glaze, I served it with cooked rice/fried rice and some fresh snap peas. It was an amazingly fantastic crock pot meal, that I will be making again and again.

Crockpot Brown Sugar Garlic Chicken

6 skinless boneless chicken breasts
1 C brown sugar
1/2 C rice vinegar
1/3 C ginger ale soda
4-5 large cloves garlic, minces
2 Tbs soy sauce
1 Tbs sesame oil
fresh ground pepper
2 Tbs corn starch
2 Tbs water

Place chicken in a 6 qt crock pot.

In a mixing bowl, combine the brown sugar, vinegar, sesame oil, ginger ale, minced garlic, soy sauce and pepper. Pour over chicken breast. Cover and cook on LOW for 6-8 hrs.

Remove cooked chicken from slow cooker and and cover loosely with foil. Pour cooking liquid into a sauce pot and heat to boiling. Combine the cornstarch and water, in a small bowl. Remove pot from heat and whisk in the cornstarch mixture. Return pot to the heat and whisk until mixture comes to a boil and thickens. Cook for 2 minutes.

Shred chicken and place in a serving bowl. Pour thickened glaze over chicken and toss to coat. Serve with rice or noodles.

  10. This looks delicious and oh so simple (my kind of recipe!). Would you recommend a mild ginger ale, like Canada Dry, or something with a stronger ginger taste?

    1. Canada Dry is our preferred ginger ale of choice, so it's the one I use for the recipe.
