New Year's Eve Menu- Shrimp Pasta with a Tomato White Wine Sauce

As 2020 comes to an end, many of us are hoping 2021 brings a better year. I am just grateful that I have my small family to celebrate with. Good food has always been a big part of our celebrations and I am looking forward to this New Years menu!


I've never really been one to celebrate New Year's Eve. My parents were never much for parties growing up, and once I was married and moved away, my Ex husband worked every New Year's Eve. So ringing in the New Year was never high on my priority list. When I met my SO, we started going out on New Year's Eve. Usually to his sister's house, to play board games, beer pong, and have great conversations with friends and family. This year however with the pandemic, I'm sure our New Year's will be low key, just us and the kids.


Since my SO is Italian, we eat a lot of seafood on special days such as Good Friday, Christmas Eve and New Year's Eve. I knew our menu had to include seafood in some way. One of my French Canadian traditions includes a Yule Log Cake, as my ancestors would go out and find a huge log to burn in the hearth, from Christmas Eve, to New Year's day. It was said to bring good luck and prosperity. Something I think we all could use in 2021. To bring us luck I will be making my Black Forest Roll Cake for dessert.


To start the meal I will be making my Bacon-Mozzarella Accordion Bread. Who doesn't love bread with pasta, and the salty bacon and cheese will compliment the sweet shrimp and tangy tomato sauce. Since we had a lovely seafood buffet on Christmas Eve, I wanted New Year's Eve to be a more complete meal. Which lead me to create this lovely Shrimp Pasta, tossed in a tomato and white wine sauce. The sauce is very simple- tangy from the tomatoes and slightly sweet from the onions and wine, with a slight fruity undertone to cut the tartness of the tinned tomatoes. I am certain my little family will enjoy this simple, yet oh so delicious meal, as we prepare to bring in a New Year. We will spend the remainder of the evening playing board games, watching New Year's Eve specials on TV and just enjoying spending time together as a family as we say good bye to a year that has been so difficult for many of us.


Shrimp & Pasta with Tomato White Wine Sauce
  

1 TBS olive oil
1 onion, diced
4 cloves garlic, minced
1/4 C white wine
1 (28 ounce) can diced tomatoes
1/2 tsp oregano and basil
1/2 tsp red pepper flakes
salt and pepper to taste
1 pound shrimp, peeled and deviened
1 pound cavatapi pasta
green onion

Heat the oil in a large skillet, over medium heat. Add the onion and saute until tender, about 5-7 minutes. Add the garlic and saute until fragrant, about a minute. Add the white wine and simmer for 5 minutes. Add the tomatoes and oregano, basil and red pepper flakes; simmer until the sauce just starts to thicken, about 15 minutes.
   
Meanwhile, cook the pasta as directed.
   
Season the tomato sauce with salt and pepper to taste. Add the shrimp to the tomato sauce and simmer until cooked, about 2-3 minutes per side. Drain the pasta, toss in the tomato sauce and serve optionally garnished with sliced green onion.

I've planned fish for the 1st, but I will add this to my traditional New Year's Eve dinner. Two mains, the merrier! Thanks for providing the recipe! Black Forest Roll Cake

Light and fluffy cherry and whipped cream filling is rolled in an airy sponge cake. 13 years ago, I made a dinner that I was totally proud of. Not only did it taste wonderful, it looks fantastic too. I was so proud of myself that I took a photo, which I wanted to share with my friends and family. Only I didn't know how I could share it with everyone, at the same time. Easy Balsamic Glazed Salmon

 This is a healthy, easy and impressive way to prepare salmon. The glaze is simple, yet flavourful, and this will quickly become your favourite salmon recipe. Salmon is a reddish fish, that is tender yet firm and it is a favourite amongst many, due to it's buttery flavour. It is low in saturated fat and high in protein and is also a great source of vitamin B12 and Potassium. These are only some of the reasons salmon has been deemed a super food. When I worked at the natural food market, I cooked quite a bit of salmon over those 3 years. It was a staple on our hot buffet and one of our most popular items. Our patrons preferred it prepared simply with dill, lemon, salt and pepper. While this is one of my favourite ways to prepare salmon, sometimes you need a little variety. The balsamic vinegar becomes wonderfully sweet as it bakes in the oven. The Dijon adds a slight tartness, to balance out the sweetness.
