A nod to the popular preteen TV show Sam & Cat, these sloppy waffles pair classic sloppy joes with crisp waffles.
Years ago, my daughter fell in love with a kids show called Sam and Cat. This show melds two shows the kids use to watch together. It stars Sam Puckett (Jennette McCurdy) from iCarly and Cat Valentine (Ariana Grande) from Victorious. It's a witty and fun show and the kids loved the hijinks these two girls get into every week. In one particular episode, they get stuck inside a secret room, they find in their apartment (which use to be Cat's Nonna's before she moved to Elderly Acres). While they are stuck in the secret room, Cat mentions her idea of Sloppy Waffles, which pairs waffles and sloppy joes. Sam falls in love with the idea and once they are rescued by their friend Goomer, the show ends with the girls enjoying Sloppy Waffles. We recently watched the episode on Netflix, and the kids commented that we should try to make Sloppy Waffles. I thought it was a fun idea, so I decided to give it a try.
I used my go to waffle recipe and made sloppy joe filling in the crock pot. I love cooking ground beef in the crock pot, because it comes out so tender and melt in your mouth. I decided to top my waffles with cheese, because I love cheese with my sloppy joes. My nephew was visiting, so he was able to try this crazy concoction. Everyone thought the combination of waffles and sloppy joes was delicious, but the kiddos said they prefered buns to waffles. I thought it was a fun twist on a classic recipe. The fluffy waffles go well with the sweet and savory beef. A super fun recipe for kids and those young at heart.
Sam & Cat Sloppy Waffles
Sloppy Joe filling:
1 lb lean ground beef
1 onion, chopped
2 cloves garlic, minced
1/2 red pepper, finely chopped
2 Tbs tomato puree
1/2 C beef broth
1/2 tsp oregano
1/3 C ketchup
1/4 C BBQ sauce (I used Bull's Eye original)
shredded cheddar, if desired
sliced green onion, for garnish
Waffles:
4 Tbs butter, melted
2 eggs
1 3/4C milk
3 Tbs sugar
2 C flour
3 tsp baking powder
1/2 tsp salt
In a large skillet, cook the ground beef, until browned, but not cooked through. Pour browned beef in a 4 qt crock pot and add in the onion, garlic, tomato puree, beef broth, oregano, ketchup and BBQ sauce. Stir to combine, cover and cook on LOW for 6 hrs.
Once beef has simmered for 6 hrs, preheat your waffle iron. In a mixing bowl beat the eggs with the sugar and melted butter, until smooth and thick. Add in the milk, flour, baking powder and salt and whisk to combine, ensuring there are no lumps. Let batter rest 3 minutes. Pour small amounts of batter, onto hot waffle iron plates (remember the batter expands when hot, so don't over fill) and close the waffle iron. Cook for 5 minutes, until the waffle iron stops steaming. Repeat with remaining batter.
To serve place one waffle on a plate, top with sloppy joe filling and top with a second waffles. Sprinkle filling with cheese if desired.
