Blueberry-Peach Breakfast Bars

Wild blueberries and fresh peaches are sandwiched a between crisp, buttery oatmeal crust.






Well our summer is almost to an end. The kids will begin their distance learning on Sept 21st, so I've been trying to think of easy breakfast ideas, for them to eat, before meeting their class online every morning. We are not sure of all the details so far, but we do know that they are expected to be online every morning, for class, with a lunch break in there somewhere. 

Since I still can not return to my cafeteria, I've been trying to keep busy by working in my home kitchen. I decided to experiment with a type of breakfast bar. The kids both love Nutrigrain bars, so I knew this would be a hit. My plan was to make an oatmeal cookie type of crust for the top and bottom and fill it with blueberries. Then I noticed that my peaches were super ripe, so I added some in along with the blueberries. This tastes very similar to a blueberry crisp and the kids mentioned that they would go great with vanilla ice cream, LOL. This is a great lunch box, or at home breakfast/snack addition, but would also make a great dessert, at the end of a dinner party.





Blueberry Peach Breakfast Bars

2 C flour
2 C quick cooking oats
1 C brown sugar
1 1/2 tsp baking powder
1/2 C butter, melted
1 egg
1/4 C milk
3 C blueberries (I used wild)
2 C fresh peaches, peeled and diced
1/4 C sugar
2 Tbs flour

Preheat oven to 350 degrees F.

In a large mixing bowl, combine the flour, oats, brown sugar, and baking soda. Mix well to combine. In a smaller mixing bowl, mix the melted butter, milk and egg. Pour over dry ingredients and stir until the mixture is crumbly. Press half the mixture into a 9 x 13-inch baking dish.

Combine the blueberries and peaches, with the sugar and flour. Toss to coat completely. Pour blueberry mixture onto the crust and sprinkle remaining dough evenly over top. Bake for 25-30 minutes; until golden brown. Let cool completely before cutting.

Bacon-Mozzarella Accordion Garlic Bread

A fresh baguette is stuffed with bacon, cheese and garlic butter, for an addictive appetizer.



When we used to go out to eat, if it is on the menu, we would order a bruschetta type accordion bread. I thought I could make an awesome garlic bread, using the same concept, but adding ingredients that we totally love. We often like to top leftover garlic bread with mozzarella cheese, to make it seem new again, so I wanted to incorporate that between the garlicky slices or baguette. And we all know how AWESOME bacon is right??





This is a super simple, yet deliciously impressive appetizer. I'm sure your guests would all Oooh and Ahhh over the ooey gooey bread with bacon. They would be totally CRAZY if they didn't!! The kids really loved this too. The inside was soft and garlicky, full of cheese, bacon and nice fresh green onion. The outside was crispy and buttery.
