Award Winning Apple Cinnamon Struesel Muffins

Tender muffins are studded with fresh apple and warm cinnamon.

About 7 yrs ago, I had entered a few recipes into the Home Baking Competition, for Canada's Baking and Sweets Show (my winning Bundt Cake recipe is currently on the website). Out of the 5 recipes, this muffin recipe was chosen to go to the final judging panel. It's a little funny, because this recipe was one that I just sent in, not thinking it would get picked and the recipes that I thought would have a chance, to be chosen didn't, LOL. So, I went to Toronto for the show and to sit as the judges tasted and criticised my muffins. BOY, what is ever nerve wracking!!! The judges seemed to think we were competing in an episode of Chopped, since they weren't being very nice and their comments were far from constructive. I sat through 2 dessert categories, before it was time to judge the Apple Cinnamon Muffins. My heart was pounding and as I heard the judges destroy the first 2 muffin recipes. I felt sick to my stomach. I was so relieved that the judges said that just by looking at my muffins, they were going to enjoy them.

The only criticism, I received was that the judges would have liked chunks of apple, in the muffins, rather than shredded apples. Hey, I'll take that anytime, LOL. It was so amazing, to win a competition, for one of my recipes. Being a food blogger and creating recipes, is what I love to do; but when I can get recognition for my hard work, it always feels nice. These muffins aren't too sweet and they have a wonderful cinnamon sugar streusel topping. They are tender and have a nice mild apple taste to them. Everyone really enjoys them and they are a perfect treat for the kids lunch box.

I originally saw this recipe on Pinterest (via Six Sister's Stuff) and it had my tummy rumbling so hard, that I knew I had to make it. I had chicken in the freezer, so decided to make this chicken on a day where I would be at school all day. Nothing like walking into the most amazing smell, when you get home from a busy day of work!
I love that this recipe is so simple, yet it is out of this world delicious. Sweet and savory combine, to coat this tender chicken. It literally fell apart as I tried to remove it from the crock pot. Once tossed with the thickened glaze, I served it with cooked rice/fried rice and some fresh snap peas. It was an amazingly fantastic crock pot meal, that I will be making again and again.

Bacon-Mozzarella Accordion Garlic Bread

A fresh baguette is stuffed with bacon, cheese and garlic butter, for an addictive appetizer.

When we used to go out to eat, if it is on the menu, we would order a bruschetta type accordion bread. I thought I could make an awesome garlic bread, using the same concept, but adding ingredients that we totally love. We often like to top leftover garlic bread with mozzarella cheese, to make it seem new again, so I wanted to incorporate that between the garlicky slices or baguette. And we all know how AWESOME bacon is right??

This is a super simple, yet deliciously impressive appetizer. I'm sure your guests would all Oooh and Ahhh over the ooey gooey bread with bacon. They would be totally CRAZY if they didn't!! The kids really loved this too. The inside was soft and garlicky, full of cheese, bacon and nice fresh green onion. The outside was crispy and buttery.

Wondering how to spend Halloween this year, due to the pandemic? Well I have 8 fun and delicious ways to make an at home Halloween, tons of fun!

2020 has been turned upside down. My kids have not seen friends, or the inside of a school since March. While we do have our social bubble, this bubble consists of family and a few select friends. Being someone who could be vulnerable during these crazy times, I have been trying to make every day life as normal as possible. With Halloween fast approaching, I have been thinking of how to make sure my children have a super fun day, but not put our bubble at risk. It would be much easier if my health was 100%, but we will make the best of our Halloween at home.
#1 Visit a local pumpkin patch

Even though my health isn't the greatest, we haven't been living like hermits. We don our masks, bring hand sanitizer and make sure to social distance. So a trip to our local pumpkin patch, to pick our pumpkins, is one way we will be bringing a bit of n…
